It's time to put this to rest for now.

I'm shifting my diet slightly, toward a more whole-food, plant-based diet. Well, OK, technically my diet was already plant-based. So, a whole-food, vegan diet? Eh, veganism isn't just about the way we eat. I'm a vegan who eats a whole-food, plant-based diet.

I spent a decent part of yesterday evening and this evening reading scientific literature, and Dr. Greger's excellent analyses and summaries on nutritionfacts.org. I was even listening to some of them on the exercise bike; I had drifted toward the topic of diabetes, a topic that's fairly personal for me, as several people in my life have been affected by it. Several studies have been conducted, which demonstrated that you can successfully reverse type 2 diabetes by simply shifting the diet of these patients. The fact that this isn't widely known is criminal.

Anyway, like I said, it's time to put this to rest.

I expect the next few weeks to be somewhat difficult, and there's no telling how long it'll take before my digestive system adjusts to this change. I ate chickpeas tonight, though, and didn't immediately curl up into a ball. That's a start, and a good indication that my previous changes have been effective. If I can eat black beans, kidney beans, and wheat without issue, I'll be quite happy.

It's weird, though, thinking about not eating coconut oil or olive oil. On the other hand, I love green, lightly-salted California olives way more than I love drinking olive oil, and coconut meat hurts my stomach, and coconut oil appears to give me heartburn, so... what am I really giving up, here? As far as cooking goes, I'll figure it out. Obviously some cookware is oil dependent, but, it's not the cookware we use every day.

As far as sugars go, I've pretty much already given them up, aside from a little bit of maple syrup in my oatmeal, and sweetened soy milk as an exercise recovery drink. I can live without the sweetened soy milk, and you can pry my maple syrup out of my cold, dead hands... yeah, OK, I'm not ready to give up maple syrup just yet.

Oh! I also had brown rice today with lunch, and I didn't curl up into a ball after eating that, either. Another indication that my other dietary changes, presumably the probiotic supplement and/or the yogurt have been effective. I'm almost out of yogurt, so, I guess I'll find out soon if it's that.

Watch, I'll wake up tomorrow with my bowels inflamed...
